Philly Cheese Steak Stuffed Peppers

I have a few small modifications I have made from the original. These are 21 day fix approved with 1Green, 1 Red and 1 Blue

Instructions
  1. For help with onion cutting: cutting an onion tutorial - https://www.youtube.com/watch?v=mVXvoQOMS2E
  2. Cut the onions into vertical slices
  3. Cut the green peppers in half and deseed
  4. Boil the peppers a few minutes until semi-soft ( about 5-7 minutes)
  5. Saute the onion in olive oil until translucent/clear
  6. Add the meat and cook until it is no longer pink
  7. Preheat oven to 375 degrees.
  8. Put some cheese in the bottom of the pepper
  9. Add some of your meat and onion mix
  10. Top with more of your cheese.
  11. Cook for 15-20 minutes until cheese is melted
Recipe Notes

These can also be made with a few other stuffing options:

  •  ground beef, tomatoes, beans, corn and rice for a Mexican take
  • sausage, mushroom and eggs for breakfast
  • sausage, onion, pepperoni, cheese and pizza sauce for pizza
